Bunny cake success
Do you remember this cookbook? As a kid, these were the coveted Birthday and Holiday cakes.There are some for almost every holiday, and lots of fun ideas for birthday parties.Since we are home, I figured it’s time to start trying some of them out.We started with the Easter bunny cake – there’s actually two versions in the book, we did the harder one.The cake recipe is pretty good, I put a lot less sugar than they were asking for and it turned out fine. I used butter instead of shortening. It’s a good sturdy cake for these type of recipes.
The icing was pretty gross – I’m not sure if they meant icing sugar, but with regular sugar it never quite took and I had to add icing sugar to thicken it. I would definitely just make a different icing.
It was pretty easy to follow the directions and cut the cake accordingly. That part is really well done and explained in the book. it was a lot of fun to decorate, we didn’t exactly have everything we needed but we made due with what we had at home.
I think it turned out really well. It’s cute and very Eastery. I didn’t put coconut over the whole thing as my family hates coconut. The rest I followed pretty closely.You need a good Easter cake, this is a fun one for sure! And you get a great activity for the kids out of it, there’s even math involved 🙂
