If you find that you have excess vegetables, or you really like pickles, fridge pickles are a great option. Don’t need fancy equipment, and not very many ingredients.
I picked up some flash food boxes on the weekend and got a lot of the small cucumbers, so I decided to try out variations of many tiktok pickle recipes I’ve been seeing.
I save all of my old jars from peaches and spaghetti sauce, perfect to reuse for these. You could use any kind of containers you have, no need to buy anything new.
All you need to do is chop up your vegetables, you could do cucumbers, red onions, carrots, beans… Anything you think would be good pickled.
I added a teaspoon of pickling mix that I picked up at Safeway and some fresh dill into every jar and some garlic. You could use any type of herb or spices that you enjoy. I know a lot of people make the red onions with no spices at all.
For the brine you just need one cup of water to one cup of your choice of vinegar, either regular white or apple cider. One teaspoon of salt. I made four jars so I quadrupled this recipe.
Bring the liquid to boil, turn it off and let it cool a little bit and pour it right over your veggies. Make sure to cover everything to the top, let it cool a bit and then put it in the fridge.
That’s it. Now you just have to wait a few days to eat it, I tested after 2 days and it was already really good but I’ll give it a few more.
Stays good for up to a month in the fridge.
